Solution: Make a Slurry

"To avoid lumpy gravy, take one simple precaution: make sure that you mix the flour or starch with cold water into a thick slurry before adding it to the hot broth or pan juices. And cook the gravy with regular stirring and scraping, so that the thickener doesn't get overcooked on the pot bottom."
